Trout with Mushrooms and White Wine

    When you need something special , but not difficult.  This dish will impress even the most stubborn gourmond.  This recipe serves 2.

INGREDIENTS

2 - Fresh Harrietta HillsŪ trout fillets

1/4 cup - Chopped green onion

1 cup - Sliced fresh mushrooms

1/2 cup - White wine (Reisling recommended)

1/4 cup - Olive oil

Salt and Pepper

 

PREPARATION

Heat oil in a large skillet.

Place fillets in pan, meat side down.

Add chopped onion to pan and saute for about 6 minutes.

Turn fillets over and add sliced mushrooms and white wine.

Simmer for 10 minutes, or until wine reduces and mushrooms are cooked.

Salt and Pepper to taste.

Serve fillets with mushrooms, onion, and wine sauce drizzled on top.
