Grilled Trout with Lemon & Tarragon Butter


    A fantastic recipe for the grill, it works equally well under the broiler.  The simple butter preparation infuses the trout with rich flavors.  Quick and simple, yet elegant.

INGREDIENTS

4 - Fresh Harrietta HillsŪ trout fillets

1 tsp - Paprika

1/4 cup - Fresh lemon juice (1 lemon)

1 Stick - Butter

1 Tbs. - Tarragon, minced (fresh or dry)

Salt and Pepper

 

Butter Preparation

Combine and heat the following ingredients:

    Butter, lemon juice, tarragon

Remove from heat once butter is melted.

 

Preparation

Preheat grill or broiler (A hot grill is preferable)

Brush butter preparation on both sides of fillets.

Sprinkle meat side of fillet with paprika.

Grill fillets meat side down for 3-4 minutes.

Turn fillets and baste with remaining butter preparation.

Add salt and pepper to taste.

Grill an additional 3-4 minutes, or until meat is opaque throughout.
